A Nutrient-Packed Duo: Broad Beans with Sautéed Swiss Chard

If you're looking to add more plant-based meals to your repertoire, this broad bean and Swiss chard combo needs to go on your must-try list. Loaded with protein, fiber, vitamins and minerals, it's a nourishing and surprisingly delicious way to work more vegetables into your diet.

Broad beans, also known as fava beans, are a variety of large, flat beans that have an earthy, slightly sweet flavor. While they require a bit of prep work to remove their tough outer skins, the effort is well worth it for their creamy texture and hefty nutritional punch. One cup of broad beans provides an impressive 13 grams of plant-based protein and 9 grams of fiber.

I paired the broad beans with Swiss chard, part of the nutritious leafy green family that includes kale, spinach, and beet greens. Just one cup of the vibrant green leaves is an excellent source of vitamins A, C, and K, as well as crucial minerals like iron, magnesium and potassium.

To add even more bright, fresh flavor, I sautéed the veggies with garlic, lemon juice and zest, olive oil and fresh herbs. The result is an unexpectedly delightful melody of tastes and textures - tender broad beans punctuated by the slight crunch of sautéed chard stems in a zingy lemon-garlic sauce.

This veggie-packed side dish comes together easily in under 30 minutes, making it a perfect accompaniment to grilled or roasted proteins, or heartier bases like quinoa or farro for a satisfying vegetarian meal. Pair it with a torn piece of crusty bread to soak up all the delicious juices.

Give this broad bean and chard combo a try for a healthy dose of plant power. Your taste buds (and your body) will thank you!
